Food-producers

Casa Vilchez - Embutidos y Queso
We have selected a popular range of embutidos, which include chorizo (paprika-flavoured sausage), salchichón (a relative of salami), and lomo (cured pork tenderloin). Our embutidos are all made by Casa Vilchez, a long-established artisan business in Lachar, a small town 10 kilometres or so from Granada, in southern Spain. It was founded many years ago by the part of our family that farms pigs, cattle and goats in the hills of Andalusia, and is still managed by them today. Casa Vilchez is a bustling, friendly place, that supplies embutidos to bars, restaurants, carnicerias, and the general public around Granada. These embutidos are all produced from the native pig of Spain, the ibérico, which is valued for the flavour and quality of its meat. Casa Vilchez also produce the chorizo and jamón used in some of our cooked dishes. All the food from Casa Vilchez has characteristically strong colours, and big, smoky flavours. Their curado cheese, made from Ewe’s milk in the same way as the classic Manchego, is a cracking partner for our embutidos, and our jamón.
Sociedad del Jamón de Trevélez - Jamón
Our jamón, sliced and ready to eat, comes from Spain’s highest village, Trevélez. Trevélez sits not far from Mulhacén, the summit of the Sierra Nevada, the great mountain dominating the skyline of south-eastern Andalusia. Because of its cool and dry climate, Trevélez is an excellent spot for curing ham. The town is peppered with little bodegas full of ham slowly curing. Once fully cured, Jamón de Trevélez has a lovely deep maroon/pink colour, a rich smoky aroma, a pleasing texture, and a very satisfying taste. The particular jamón included in our Tapas in a Box is the Tradición 1862, which is cured for over 20 months, and is reckoned by some to be the best jamón to be found in Trevélez. Frutos Secos - Almendras
Our organic almonds come from one of the richest horticultural areas of Spain, around Valencia and Alicante. They are produced for us by a local Cooperative, which collects the harvest from hundreds of farmers around them. The almonds are then lightly roasted in sunflower oil, and then salted, for a deep mahogany colour, and a bold, rich flavour that is worryingly addictive.
Casa Graupera - Neules Farcides
Our delicious sweet artisan delicacies are produced by Casa Graupera, based in the historic centre of Mataró, on the mediterranean coast between Barcelona and the Pyrenees. Renowned in Cataluña for their “Neules” (filled wafer parcels), made and folded by hand, Casa Graupera was founded in 1895 and is still run by the fourth generation of the family. This long-established family bakery has received numerous awards for their dedication to the defence of artisan production methods, which came close to disappearing during the huge growth of industrialization in the '70s. The Neules we bring to you are made by hand, and filled individually with candied orange peel and 70% cocoa dark chocolate…delicious !
Damon Corey - Hot Tapas
Our Hot Tapas recipes are based on years of experience cooking them for a large food-loving, hungry Spanish family. The recipes have all been developed, tried and tested by Ana Palenciano and our Executive Chef, Damon Corey. Damon and his team cook the dishes by hand, in his kitchen at Stratford Upon Avon. He has an excellent network of local suppliers, which he works with to find the best quality ingredients. As soon as Damon finishes cooking a small batch of foods, it’s blast-frozen. Because this process reduces the temperature of the food very quickly indeed, it captures the texture and flavour completely, so that the food on your plate is every bit as good as it was in our kitchen.
